I see people make chia seed pudding all the time online. It’s such a simple snack to make and SOMEhow I found many ways to mess that up. =X I just… I mean.. see what had happened was…. measurements… just don’t.. I can’t. I dunno. So to sum it up, after 3 or so failed attempts at chia seed pudding, I finally made a batch that I didn’t screw up!
INGREDIENTS:
- 1 banana
- 1 tbsp chia seeds
- 1/4 cup coconut milk
- 1/4 tsp vanilla extract (optional)
DIRECTIONS:
- mash the banana
- add the rest of the crap
- mix well
- cover & refrigerate for 20 min then mix/stir/or shake again (this varies, I’ve left it for an hr or more too) **this is an important step because apparently the shaking of the chia seeds is what helps it activate it’s goopiness – yes, that is the technical and scientific term of what’s happening at this stage**
- leave overnight
- eat in the morning
I’m not a very patient person (when it comes to food) so I’ve eaten a (few) batch(es) prematurely before the chia seeds have gotten a chance to become all gooey after soaking in the liquid.

I made several batches of this pudding stuff and had to eat it all. Tough job, I know. Even my failed attempts tasted good. Hurley wanted some too.
